Hydrangeas do change color with PH.  Here in Florida, most flower blue --
because we have acidic soil.  So if you want blue -- add acid.

Pink is from alkaline soil.

But, there are hybrids which claim to stay the same color (pink, blue or
white) no matter what your PH.  So, I guess it depends on what kind of
plant you have.  If you want, experiment by altering the ph, and see what
happens.
