I found a pretty good URL about how to preserve an abundant hot pepper
harvest, here it is:

There are several good suggestions here. Though I've never dried peppers
before, I'd dried other types of veggies (and meat) quite well in my
oven. I set it at about 150 - 200 degrees, kept the door slightly ajar
with a metal utensil, and spread out the veggies/meat on baking racks
("cooling" racks, really), turning every couple hours if needed. Takes
12 to 24 hours, depending on thickness/succulence. The web page I gave
has other ideas for drying peppers, and one person suggests powdering
one pepper to use as a seasoning, neat.
