When frost nears, begin examining all toms still on the vine but not yet
reddening. Gently turn them over and look at the bottom. If you see a
creamy, indistinct "star" radiating out from the center mark, the tomato has
passed an internal point of no return. It will, in fact, turn red if picked
and brought indoors. No whitish star? That green tom will never ripen no
matter what.
The latter greenies can certainly be fried up just fine, but they'll never
turn ripe. The starred ones can't be stopped.
