At anything over 212` you won't have to worry about accumulating moisture.
As long as there is a way for expanding steam to escape, the humidity won't
re-hydrate what it was just forced out of...

A circulating system of some sort would be a good idea for dehydrating, but
not to vent moisture to the outside, but rather to circulate the heated air
evenly inside the box. If you apply >= 212` heat evenly over your whole
batch, they will all dry out at the same time, avoiding scorching or
inadequately dried fruit.
