Pick them green and fry them up.  They are delicious sliced, dredged in
seasoned flour and pan-fried.

We're in So. Calif and we do the same thing - but because we have a
terrible woodrat problem this year. We live in an urban/rural interface
area, near some canyons, and they come out at night to eat our garden.
Trapping helps, but the best solution is to pick them when they're
yellow/orange or pinkish.
