I'm not absolutely sure Amy, but this sounds like the pollen bearing anther. 
It may be closed when the flower first opens. I also find that sometimes 
these don't open at all, especially in wet weather, when the pollen may 
absorb moisture, and burst before the anther opens.

There are three anthers and three stigmatic lips. The stigmatic lip looks 
much more like a small petal, that what you might be used to seeing in a 
lily, daylily, rose etc. The style crest ends in what appear to be two 
(often ruffled) 'petals' one on top of the other. The upper one is split 
down the middle. When you part these, the lower 'lip' should be moist and 
has a slightly shiny appearance. This is where you deposit the pollen. If it 
is completely dry, don't give up hope. A little saliva applied to the 
stigmatic lip may aid pollenation.

The anther bears the pollen, the stigma is the female part. The anther is 
the little cream pollen bearing stem standing up stiffly just behind the 
beard, under the style crest. If the pollen is not visible, you may have 
some success by picking the anther and taking it inside for a couple of 
days, until it opens revealing the fluffy pollen.

Hope this helps. Some of my descriptions sound a bit strange on re-reading. 
Most iris books have a diagram of the various parts, that you could check.
