If the little critter was out crawling around, odds are it wasn't an Iris
Borer.  My limited experience is that they spend their whole larval life
inside the plant (of course if they hollow a plant and kill it completely,
they must be able to go look for another?).  Lots of caterpillars
overwinter in the soil, so it could be any number of things (?most likely
harmless to the Iris?).  Did you happen to take a photo of it?
