Potting Iris in winter

All this talk about potting iris made me wonder about
what we're planning on doing this year.
We have 16,000 iris being delivered today. I was
planning on potting 2,000 or so of them immediately
and overwintering them in a 50% dirt (heavy clay
amended with some sand and compost..) and 50% potting
soil (no dirt).
They pot okay for a season, but we have cold winters
here. Not quite as cold as in Manitoba I'd say, but
very close. We had our first 2 frosts August 18 and
19th already.
Not a single day this year over 91 degrees, and highs
of 50 some degrees for the past several weeks really.
Maybe 70 today but that will probably last only a day.
lol.
Anyone have experience keeping plants in pots through
cold winters?
