Hi Griff!
    You inquire:

Back in the early part of the last century while a family of settlers was
waiting to cross an anonymous river down South the squalling and fussing
youngest member of the clan was giving its mother no end of aggravation, so
she turned to an old French trapper who happened to be standing nearby and
asked, "How can I ever make this baby quiet down?", to which he replied
"With la coochee coochee coo". The name stuck to that river and it has been
known as such down to the present day, except that it was shortened a bit
for the convenience of mapmakers.

You asked, and now you know!
