In that case you might want to water them. But if you are in Zone 9 it is
arguable that they won't get adequate chill to do them much good anyway. You
might want to stick the pots into ziploc bags--fold them over, don't
seal--and stick them in the humidor of the fridge until mid March or so.
If I may intrude, what kinds of irises are you trying to get going and where
did you get the seeds?
