I've never planted fresh seeds out of the pod, but have waited till fall to
plant in Window boxes and have let nature take over.  The natural
freezes/cold weather seems to do the trick every year and many seedlings
emerge in the spring.  Since iris seeds can germinate for up to 18 years
(per the "World of Iris" book), I carefully remove the seedlings and keep my
seedboxes/window boxes for another 2-3 years.  In quite a few cases - the
second year will provide me with more seedlings than the first year.  And
the third year not too bad either. And I don't even keep those window boxes
moist all year.  The seeds (I think) are naturally built to follow the
seasons as well. After that - - I start anew.

Planting seeds as soon as they are ready to fall out of the pod - - seems to
be a natural course that the iris seeds would take anyway. And then they
would follow their natural pattern to dry a little, and then get themselves
planted/rained into the dirt.  However ..... iris seeds running into the
refrigerator just doesn't seem too likely to me.  :-)

Experiments are fun - - so I think if you are intrigued - go with it.
Messing with nature is fun, and so is simply letting nature take it's
course. I think the answer here is - deciding just how much work do you want
to do?  And whether you think this will help or hurt your hybridizing goals.
