To correct a common misconception.
In the chain of chemical reactions, lycopene (pink colour) comes before the carotene (yellow). The "t" gene in four dosages, prevents the lycopene from converting to carotene. I have in front of me some recent articles on cartotenoid pigment development. Allthough I'm struggling with all of the terms and information, it is very clear that lycopene develops before the carotenes and that the suppression of this conversion leaves pink as the colour. This suppression is at times not complete, giving us the orange colour which is a combination of lycopene (pink) and beta carotene (yellow)
I have been doing some interesting kitchen lab experiments on these pigments and their distribution this year when flowers were in bloom. Much new and interesting data to be forthcomming. Including a yellow pigment that is water soluble (not a carotene) Hope to get out articles both on Kitchen lab techniques that can be done by anyone and on some of what I have found.
