40o is perfect. or close enough to perfect to not make a noticeable difference. ;-)

Just don't let it get near freezing - the thermostat in my ancient fridge is sometimes a little erratic, partly depending on how stuffed full it is, so I have mine set higher just to be sure.

for them to break ground after they sprout.   What's the temp where they
