Diane,
Louisiana Irises grow very well in Florida, but they need lots of
moisture. Here, I grow them in sunken containers filled with a mixture of
soil [sand] and Canadian peat. I water them twice per week unless it rains,
and they do fine.
Some Louisiana Irises have a trait called "summer dormancy" in which
they die back in the summer, and re-emerge in the fall. That is probably
what you have experienced. There is also a list dedicated to Louisiana
