I'll back Mike up on thise one. My potatoes rotted, and boy , do they smell
bad. The stalks in water method was fine, and you can change the water
regularly. If the stalk is long enough, the end can be snipped off every few
days, to prevent it rotting.
So long as the pods are 8 weeks from fertilisation, they will mature if you
just keep them dry. The seeds may be a little smaller, but should still
germinate. If you keep good records of pollenations, you will know how old
each pod is.
