Welcome to Iris-l, and happy gardening. You can remove most of the
letter you are replying to, and just quote a small section. I do this by
highlighting what I don't want and cutting it off. But I'm computer
illiterate, and have only learnt how to use the reply buttons this week.
There was some advice in the Feb archives, which you might hunt through.

I think a 'family tree' type program for recording pedigrees, and
comparing the would be useful. Most other stuff I just write up on my
word program, including garden maps.
