They will grow fine....provided the pot is big enough. It should be at least 10" deep and 10" wide for a single rhizome. Good drainage required, so hole(s) in bottom a must.
Plant the rhizome with the non-fan end fairly close to the edge of the pot. Increase will generally occur off the fan end and this will optimize the area.
You will need to be careful, as the pots get very hot in the summer, and require more water than iris in the ground . They also can use a bit more food...watering carries the nutrients out those holes, whereas they would stay in the soil if in the ground.
We have one club member who does landscaping, and grows most of his iris in pots, for his business, but has been known to win ribbons at shows with stalks cut from the potted iris.
