There are at least two kinds of gypsum sold as agricultural
amendments. There is a tan-brown pelletized gypsum (very
small pellets, about the size of millet seed) and a white
granular form. I have used both, but prefer the white because
of the finer texture. Be careful adding gypsum to your soil,
as it can lower pH (acidify) your soil. Gypsum does act to break
up the clay structure, but is not a replacement for organic matter.
It is a nice aid when you start improving soil, until you can add
enough compost over a few seasons to reach your desired goal.
