Dear Louise,
   Being a NOT leaving my plants person and having moved several 
times over the years.  I dig up and DRY my Iris rhizomes in August.  
Pack your irises for moving, keeping your rhizome and about six 
inches of the fan.  You can wrap each plant in newspaper.  Remember 
to write down names and secure the tags to your plants.  
Depending on where you are going will determine how soon you can 
replant your rhizomes.  Store iris rhizomes for only one year and 
expect two years before you get good blooms.
As for peonies you need to get the roots.  Cutting off most of the 
tops and drying them before packing.  Your Japanese Maple may die, if 
it is to big to dig up.  Never moved a tree I planted.  Good Luck on 
moving.
