Cornucopia II lists a tropical cosmos as edible. Cosmos caudatus is native to Tropical America. In Indonesia its young leaves and tops are eaten raw and cooked.
I can't think of any poisonous Asteraceae (formerly called Compositae).Dahlias are edible- the petals can be used in salads and the tubers are eaten in some parts of Mexico. We decorated a wedding cake with dahlias - as you planned to do with the cosmos, just for decoration, not for eating.
