Fennel and Asafoetida
Actually, there is another culinary fennel: Foeniculum vulgare var.
dulce, in which the leaf bases are not thickened as they are with
Finocchio (F. v. var. azoricum). F. v. ssp. piperitum I know nothing
about. And Ferula assa-foetida, the source of asafoetida (an Iranian
native), is used both as a culinary and a medicinal ingredient in the
East.
