fruit set on apples

I live in a coastal area of Los Angeles where the temperature rarely goes
below 40 degrees. I grow the Gordon apple in soil that is mostly a pile of
rocks and in more shade than the tree wants. It still has most of its
leaves now in mid Feb., only a few turning yellow. It acts this way every
year. I never defoliate but still it manages to bloom and set a lot of
fruit.

I find the fruits delicious in flavor, sweetness, and texture, and I used to
enjoy them, but these days they are all eaten by crows, squirrels, and
raccoons.
