Does anyone know how garden snails are prepared for cooking (and/or have
recipes)? I promised ages ago to post the info on my garden site but never
have found it. I remember you let them cruise in a pan of cornmeal for a
few days but beyond that, all is foggy.
I was just about to post the same question! As if having the same name
wasn't confusing enough! :-)
My SO would very much like to cook and eat our garden snails. I have said
fine as long as he promises not to prepare or eat them in front of me
(ewww). We have both been looking for recipes. They aren't hard to find.
Joy of Cooking (the old edition, haven't looked in the new) has good
directions. There are also some webpages.
If you put all the recipes together you get very detailed instructions for
feeding the snails to clear out their systems and cooking them. The
problem is that no one gives directions on one step. They say to
"eviserate" (sp?) the snails but don't say what the entails. I've told my
SO that it must be self-evident once you begin but he is unwilling to go
through the two or so week process of feeding the snails if he's not sure
he will be able to prepare them properly.
Does anyone know of a source of directions for killing and cleaning the
snails before cooking?

P.S. Anyone who uses any type of pesticide or herbicide in the garden
should not attempt eating snails. Does anyone know a snail's natural
range? There was some snail bait last year in the neighbor's garden and
there are other neighbors I'm not sure about. I'd like to rule out the
possibilty of travelling.
