Many thanks to those who responded to this thread. It has been really helpful.
What I have done is spray the fruit trees with a strong stream of water every day, for several days. The honeydew is all but gone, and I think (hope) the birds are eating what remains of the aphids. Everyone except the aphids seem happy: the trees seem to enjoy the watering, the birds consider it a signal that I will bring more food, which I do, and my cat stays away when I approach with the water hose but doesn't seem angry with me. He thinks I am a bit crazy to play with water in this way but has given up trying to change me into a cat.
