Deadheading Proteas

Hi
I have several Proteas that are flowering. How
does one prune the flowers that have bloomed and are dead?
I have been breaking the head off at its
juncture with the stem but is this the correct way?
Should I be cutting the flower-bearing stem back
to its juncture with the branch or perhaps only cut the stem back leaving
two or three sets of leaves?
Any advice would be appreciated
