there are several links to information on chufa (cyperus esculentus).

It's used in horchata, a delicious summer drink in Spain.  I was thinking
of cultivating my own chufa tubers when I returned a vacation in Spain but
the
plant seems to be an awful weed so I am resigned to being horchata-less
this summer :(
