RE: Italian Quince liquor


This sounds wonderful.  Where does one obtain bitter almonds in the
U.S.?

	An excellent way to warm spirits on a cold winter night -  'alla
salute' and 'cin cin' with this
	 
	                                            Italian Quince
Liquor
	 
	Made now, this excellent after dinner liquor will be ready for
Christmas as it needs about two months to mature and mellow.
	 
	Grate 10 large quince, put in a large glass bowl and mix with 1
litre aquivite or grappa (you can use pure alcohol or, in a pinch,
vodka).  Add 15 bitter almonds, 2 sticks cinnamon, 10 whole cloves and 1
teaspoon grated nutmeg.  Cover tightly so the alcohol won't evaporate
and set in a dark cupboard for 2 months.
	 
	Strain, discard the pulp and spices, and then filter the liquid
again (pour through a double layer of coffee filters with a big wad of
sterile cotton in the bottom).  Drop by drop, the liquid will come out
completely clear and transparent.
	 
	 Apart, boil 2 cups of sugar with 2 cups water until the sugar
is completely dissolved.  Cool.  Then mix the cooled sugar syrup with
the filtered alcohol liquor, bottle, and serve.  Sip tiny glasses of
this delicious liquor after dinner (with the excuse that it will help
you to digest and prevent stomach acidity).  In the summer it can be
served over crushed ice.  Mummmmmmmmm good.
