I hunted out "Passionate Pilgrimage" which is composed of extracts from the letters and diaries of Katherine Mansfield. She convalesced in the south of France in 1915-1921. She mentions jonquils, daffodils, roses, immortelle, branches of mandarines, red anemones, almond blossom, violets, mimosa, marguerite daisies, carnations, wallflowers, orange blossom, magnolia, rosemary, zinnias, pansies, daphne and jasmine. I'm not sure if the rosemary and magnolia were used as cut flowers, but the other seem to have bee. Roses and violets she mentions buying at the auction wholesale.
She also mentions a few other food items worth thinking about. Nougat du Pays made from the local almonds was a special treat, and figs on a leaf in a bowls as well as oranges and piles of grapes. "One must never drink vin rouge in the Midi", she says. The vin blanc was wonderful. She drank champagne on occasion.
I think there's a publication or maybe several with much more material, my book is a rather lightweight book. Mansfield was quite observant, and described her surroundings in some detail.
