excellent paper on this topic, including food safety notes. http://ucanr.org/freepubs/docs/8267.pdf Lots of different
methods. Be sure to check
the fruit for spots or holes from the Olive Fruit Fly, a now common pest of

All, Our
allegedly fruitless olives have a bumper crop this year. Does
anyone know a simple kitchen recipe for curing olives? As these were not
bred for flavor, I don't know if they'll be any good, but I'd like to test
them. Thanks
