RE: Curing olives

Hi Ben,

UC has an excellent paper on this topic, including food safety notes.

Lots of different methods.

Be sure to check the fruit for spots or holes from the Olive Fruit Fly, a now common pest of olives in California.  Paper on that is http://www.ipm.ucdavis.edu/PMG/PESTNOTES/pn74112.html

Cheers,

Bracey

Subject: Curing olives

Hi All,

Our allegedly fruitless olives have a bumper crop this year.

Does anyone know a simple kitchen recipe for curing olives?  As these were not bred for flavor, I don't know if they'll be any good, but I'd like to test them.

Thanks for any advice!
