Pomegranates

Without a doubt, pomegranates make a wonderful drink.
A dear friend from Malta remembered her childhood breakfast juice...the
maids would pick ripe pomegranates (they lined their long drive in Valetta)
every morning and hand squeeze the liquid around the seeds so the children
had a tiny glass pf pure delicious (preventative medicine) before
breakfast.
For those with great "certosino" patience...try this:
Gather a huge basket of ripe pomegranates. Break them open one by one and
rub the seeds out into a seive. With your hands (clean, heaven forbid...)
squash the seeds to release the precious juice.
To serve, sweeten the juice as needed. Pour 1/4th up in champagne flutes,
add crushed ice and sparkling mineral water. Excellent if vodka or gin is
used instead of the water...a perfect toast for the new 2000 celebrations.
Freeze the unused juice in small containers, such as empty yogurt cups. It
freezes without losing it's characteristics and makes a WONDERFUL TREAT on
a hot summer evening as an aperitif.
COMPLAIN AS YOU SQUEEZE AND SQUASH all you like. It is well worth it
later!
