Here in Greece there is a book available in Greek and English, altho it was
first published in German, called "Greek Plants in Myth, Art and Literature"
(Griechisce Pflanzenwelt in Mythos, Kunst und Literatur") by Helmutt
Baumann, published by Hirmer Verlag, Munchen 1982.  It is a field guide to
plants found in Greece with so many of the literary and artistic references
you mention.  The bibliography must be of further interest to you-about 200
entries there.  My copy, in Greek, has no ISBN or Library of Congress
number, so I can't help you there.

Heleniums are not mentioned, untless they are known by another name in Greek
or Latin, but Chrysanthemum coronarium were definitely used in ritual.
