I grew up in southern Spain, where quince, locally known as 'membrillo', is 
widely available in most shops in a gelatinous form.  This is nice and 
easy to either cook with (can be used as a substitute for apple sauce)
or simply spread on bread.   Umm!  

I would love to try your version Moira...
