I don't really know the answer to this question. I'll have a look in the
pruning books. I would say that stooling is to achieve an ornamental effect
and coppicing is a commercial activity. Otherwise they seem the same to me -
I'll look tonight. The house is full of kids and I get only a share on the
computer when that happens.
