Hydrangea

I'm asking this for a friend who planted a hydrangea last year, and this
year was looking forward to white balls of flowers that she could dry.
Instead her flowers were sort of "flat" (her description) and the blossoms
have fallen off iinstead of staying on the bush as they dry out.
Anyway, is it just that the hydrangea is immature - will it grow more like
a hydrangea next year - or is it just a variety that won't grow the way she
wants.
We are in upstate NY, Zone 5.
