pH effects nutrient up take and utilization in plants and also plays a role
in fung/bactra growth thus also effecting pathogen activity. pH has a great
effect on soil nutrients and plants physiology have adapted to the type of
soils they grow in. both extremes of pH in soils have duress on specific
nutrients and those plants that are adapted to the lack of those nutrients
cannot deal with an over abundance.
You should be able to find information in books dealing with soil science and
basic botany that will gve you an overview.
Wish I had more time to be very specific but the work load does not permit
this right now.
