I think the other thing at work is his very German heritage ( he's first generation) - garbage is to be disposed of - end of story.
So some times I stay quiet and harvest that which makes it trash and should be in the compost bin.

At one time my husband complained loudly about composting and was nearly
untrainable.
Finally I pointed out to him that when I buy fruits and vegetables I must
pay for the whole thing so why should I toss out what I'd paid for and
was useable in another form.
He finally relented and now can occasionally be seen composting coffee
grounds.
