If you want to dry the sage for storage, pick it before it flowers and also
pick it in the morning before the oils dissipate. Sage has a high water
content and takes longer to dry. I like to use herbs in flower arrangements,
especially if they have interesting foliage. As for cooking, in addition to
the usual uses, I use sage and other herbs, especially thyme, for smoking
ribs and chicken on my gas grill. Just wet them and place them directly on
the top of the grilling grid, then put your meat on top of the herbs and
close the lid. Be aware, it will smoke like crazy. You could do this on a
charcoal grill too, but I do it to compensate for the lack of smoke I get
when cooking on a gas grill.
