In Z8 here Dahlias will only survive a very mild winter. I dig mine after
frost has killed the stems and store in a cool dryish place(in my case a
frost free but otherwise unheated greenhouse).

Valencia,
Dahlias are tubers that in most climates must be dug and stored in
winter to avoid freezing. Zone 8 should be able to handle having them
in the ground all winter with a light mulch.
They are as easy to grow as a potato and they do not get potato bugs!
They grow fairly tall and most requite staking. They come in many
different forms, sizes and colors. Do a bit of surfing and ask for
dahlias as there are several web sites for them.
I am sure you would find some you really like.

PS there is a dahlia list on the net too.
