Barb,
Eryngium giganteum (Miss Wilmott's ghost) is a lovely garden plant. It is
monocarpic, that is, it dies after flowering (but it leaves elegant
skeletons). It seeds itself around very readily.
In my garden here in Ireland (which is Zone 8, I think) it takes three
years to flower (the first year it just makes a pair of heart-shaped
leaves). Perhaps with your hot Wisconsin summers it would grow more
quickly.
It likes a well-drained, not too rich soil in full sun. It has a long tap
root, so it likes to get its moisture from deep down. It is ideal for
growing in gravel or other dry situations.
It is originally from the Caucasus Mountains, so it has to be very hardy.
