This is one of those 'kink of depends' questions. Dependent upon which species
you are playing with. You have seedlings you have grown? How old are they?
You can grow more species than I can here as to hardiness, but I will not
generally have some of your problems with moisture during summer. As a general
rule, a good raised bed is the best place to plant them out if they are of
sufficient size. Raised bed will insure drainage. I do mulch mine with chopped
leaves each fall after dormancy. My experience has been they survive best in the
open garden. First year tubers in pots tend to rot if they are kept too moist. A.
flavum just completed bloom and began to set seed in my garden.
There are many methods for playing with the survival of young tubers. You may
want to check out the Arisaema-L Listserv that has been recommended to you in a
