Quick!  Get them out of the fridge and let them dry out so they don't 
mold.  Think about it:  organic matter  +  baggie =  mold   -- or do 
you clean out your fridge more often than I clean mine? ;- }
Next, ask someone who knows Amaryllis about planting them.
