They may well, Jeanne.  I've never been without Sweet William in bloom
since I first planted it, but some years I have more than others.  If I'm
running a little low I buy a couple of extra plants at the nursery. You
could seed some extra plants just as easily and more cheaply.
I think the problem with your Canterbury Bells is that the variety you are
growing are too big.  Mine had flowers only half the size you describe,
and the stems had no trouble holding them in position.   You need to have
some sort of supports in place before the plants grow too tall, so that
you don't risk breaking the stems.  Perhaps something like a tomato cage
would work.
