Hi Jill,
I suppose that it all depends on what kinds of landscape design they're
going to be doing... Residential, regional, parks, etc... Also, are
you looking for information about plant material, principles of
design, etc...
Anyhow, I'll take a stab in the dark here... :)
One of the better books that I've read about design principles is
"Basic Elements of Landscape Architectural Design" by Norman K.
Booth. Cost is currently about $50.00 (link to Amazon below):

It talks about aesthetics, spatial sensations, drainage, color,
influence of movement, control views, microclimates...
Another book that I would recommend is "Design on the Land: The
Development of Landscape Architecture" by Norman T. Newton. Cost
is about $60.00:

It talks about the history of landscape design over time, starting as
early as the palaces and ziggurats of Mesopotamia and ending with
urban design. It's a great resource when you're trying to understand
design styles by helping one understand the use of water in Italian
villas, the importance of lines of sight at Versailles (and how they
were subsequently used by L'Enfant in Washington D.C.), etc. It's
a great project to read the book, then choose a style to "mimic" in
your own designs.
