seeds that need cold


I took the advice of several listmembers and have thus far germinated
hollyhock seeds in the moist paper towel in a not-sealed plastic bag with
bottom heat; 

there are three perennials' seeds which need cold which I put in the
refrigerator in the moist paper towel etc.

I expect to keep checking on those in the frig every week or so to monitor
the moisture; my question is:

will they sprout in the frig or will I just take them out when it's time
according to the package, and then put them in soil with bottom heat to get
the sprouting going?
