Hollyhocks and other things

I've a question about Hollyhocks. While I am in the garden (think
spring, not now) pinching everything back to have nice bushy plants, can
I pinch back my hollyhock stalks? This year my hocks were 8-12 FEET
tall. They were wonderful, but crowded out some smaller things in their
zeal. I'm thinking if I can pinch them back, they might fit in better.
I'll sacrifice height for bloom, but not vice versa.
Speaking of now (instead of spring), we've had the most amazing autumn
here in zone 5 (SE Wisconsin)!! Normally we're in the low 50's/high
40's this time of year. It's easily 75 outside today! I have things
blooming that I've NEVER had this late. We've had a hard freeze out
here in the ex-urbs, but some things are just going on unaffected!
My tricyrtis (toad lily) has at least 200 blooms on it - last year it
was black at this time of the year. My guara is blooming it's little
heart out above the 8 inches of leaf mulch I dumped on top of it, and my
dianthus are, too! The buddleia leaves are still green and I think they
want to bloom again, but I stopped deadheading in September so as not to
encourage new growth during the winter.
I pulled in all my containers and was astounded to see the roots of the
sweet potato vine! Has anyone else seen those magenta *potatoes* in the
bottom of the pots? They were HUGE (6"-8" long!)! No wonder I had to
water it everyday!
