You probably have an answer by now, but I will offer my two cents worth. I
usually pick my lavender early in the a.m. (around 6 or so), because the scent
is usually more intense before the sun gets it. The bunch that I pick I bring
in and hang upside down in a darkish, cool area. I wrap the stems with a
rubber band and the band will shrink along with the plant as it dries. After
about two weeks I remove the blossoms by running my fingers over the stems. I
did this all summer and have a basket full now just of lavender.
They say to pick just before the blossoms open. I have done it both ways and
it still smells great.
