Hellebores should do quite well for you in zone 7.  They do not seem to
mind heat at all.  Some are drought tolerant to a certain extent although
they will wilt if they get bone dry.  They will want shade where you are,
except for H. argutifolius who really needs some sun - but probably not
full sun in hot climates.  Most of them like good soil with sufficient
organic material that drains well.  H. niger is the only one a tad fussy
about soil - it really needs a neutral to slightly alkaline soil to do real
well where the rest don't seem to care about pH.  I did a series on
Hellebores a few months ago which gives a fair amount of information about

Many of them are also hardy as far north as zones 4 and 5...some are not
and the hybrids you saw on the hellebore site (Graham Birkin's hellebores)
would do best probably from zone 6 to 8 or so...

These are deep rooted and long lived plants who require very little fussing
about when planted in the right location.  The only thing you have to do
each year is cut back the old foliage at the right time of year.  

Can't have too many hellebores IMO:-)  Go for it!!
