Mea, A method of seed collecting that works for me with almost any plant is
to watch for the nicest plumpest flower to turn brown and begin drying. The
trick is to not collect the flower too early - before the seeds ripen - but
to catch it before the seeds start dropping. Put the drying flower in a
brown paper bag and hang it in a warm (not hot) place with a little breeze.
I shake the bag every day and you can hear the seeds in the bag. After a
few weeks, all the seeds will be in the bottom of the bag instead of in the
flower. Sorry if this sounds vague, it would be so much easier to show you
what I mean.

Marilyn recently mentioned Pennisetum setaceum 'Rubrum', which I've been
admiring all summer in the public plantings where I live. I've never
collected seed from a grass before -- how can you tell when the seed is
ready, and I'm assuming it will be along the stem of the plume? (Sorry,
don't know the different "parts" of grasses.)
Thanks! Mea
