They have leather mouths, Bill...IMO, thorns act like a condiment to
them - like salt and pepper; just makes it taste better:-) I've
watched them spend long periods browsing multiflora roses and
mile-a-minute vine (they love that one), which is very prickly. They
used to eat my curcubit foliage, which is prickly to the touch and
seem to relish raspy leaves like wineberry and even moneyplant. They
never ate my junipers (too much else to choose from), but I have read
that they will do this. Can't imagine chomping down on that prickly,
stickly foliage, myself, but when they are hungry, they will eat
anything.
And, you are very right - they do change their tastes, plus new
members of the herd have different tastes so sample new plants.
They'll do as much damage sampling as straight out munching, really,
esp. if there's a herd of them.
