growing from seed

I have removed the seeds from a hollyhock, a purple monarda, and a red
monarda, and now need to know whether since some of them were very fresh and
not dried, should I be making sure they dry out by exposing them to the air,
or can I leave them in the envelopes and hope they won't get mildewed?
I have viola cornuta (jumping jacks), gaillardia, and delphinium sprouts to
put in the ground now, in NYS zone 5; who knows what the winter will be
like, but if they survive...
I put in sprouts of foxgloves in the spring, and now the plants are of a
good size, so I'm expecting great things next spring; that's one of the
reasons gardening is so good for a person, helping bridge one from the
season of dying to life starting again.
